Refraction Demo:  Have a deep, large-mouth container filled with water.  Use a string and weight to suspend a small floating target in the water about six inches underwater.  Have the students attempt to poke the target as if they were spear fishing.  On the first attempt the students should miss high and on subsequent attempts should discover they need to aim in front of the image they see do the different refractive indexes of air and water.
